Vanilla cupcakes with Vanilla buttercream {Baking}

I think the best thing about baking is sharing with others and enjoying what you have made, there is a sincere sense of accomplishment when you over cater a batch of cupcakes for a colleges birthday to find none left over.

I decided to try a recipe by Sugarlace it was super easy and tasted amazing.


Vanilla cupcakes
Makes approximately 24 cupcakes
240g unsalted butter, softened
2 cups caster sugar
1 tbsp vanilla extract
4 eggs
3 cups self raising flour, sifted
1 cup buttermilk

Directions 
1. Pre-heat oven to 175 deg C. Line your muffin tray with paper cases.
2. Beat butter and sugar until light and creamy. Add eggs one at a time. Beat in vanilla and buttermilk.
3. Add 1/2 of the sifted flour to the butter batter, and then beat until just combined. Add the remaining flour and beat well.
4. Divide the batter on to the cases evenly.
5. Bake for 20 – 22 minutes. Cool before frosting.

Vanilla buttercream
100g unsalted butter, softened
1 1/2 cups icing sugar mixture, sifted
1 tsp vanilla extract
1 tbsp milk

Directions 
1. Beat butter until soft. Add icing sugar.
2. Add vanilla and milk. Add more sugar if frosting is too runny, or milk if it’s too solid.

Here they are assembled on the cupcake stand from my husbands Birthday party picnic.



Although living sugar free I still have fun from time to time and enjoyed a cupcake with my colleagues. There is something suspicious a cook not eating their own cooking!.
